One of my favorite canned foods is chickpeas. These little protein-packed powerhouses taste awesome roasted and tossed in a salad, YUM!
For my vegetarians and vegans, chickpeas are an awesome source of plant-based protein full of fiber to slow the rise of blood sugar that happens after we eat. In other words, chickpeas make you feel fuller for longer! They definitely earn SUPERFOOD status!
Roasting chickpeas is ridiculously easy. Rinse them straight out of the can and spread them on a baking sheet. Toss liberally with olive oil and spices, then cook on 400 F - 425 F for about 20 minutes (take a peek here and there until they're nice a crispy). So delicious!
