Chia seed pudding is a delicious and healthy breakfast to meal prep for the week. It's creamy, flavorful and loaded with protein, fiber and omega-3s.

Serves: 4 servings
- 2 cups coconut milk
- ½ cup chia seeds
- ½ tsp vanilla extract
- 1½ tbsp honey
- Combine all ingredients in a bowl.
- Mix well, until combined, until mixture begins to thicken.
- Cover and store in refrigerator overnight (for at least an hour).
