Chia Seed Pudding

Chia seed pudding is a delicious and healthy breakfast to meal prep for the week. It's creamy, flavorful and loaded with protein, fiber and omega-3s.

Prep time: 5 min

Cool time: at least 1 hour

Total time: at least 1 hour 5 min

Serves: 4 servings

  • 2 cups coconut milk
  • ½ cup chia seeds
  • ½ tsp vanilla extract
  • 1½ tbsp honey
  1. Combine all ingredients in a bowl.
  2. Mix well, until combined, until mixture begins to thicken.
  3. Cover and store in refrigerator overnight (for at least an hour).
