Blueberry, Strawberry and Jicama Summer Salsa

There will still be all the BBQ basics like burgers, hot dogs and potato chips BUT I like to add some lighter dishes like my fresh summer salsa. This one is a personal favorite recipe that I'll keep reposting until the end of time. 

  • 1 cup fresh blueberries
  • 1 cup diced strawberries
  • 1 cup diced jicama
  • 1/3 cup chopped cilantro
  • 1/4 cup finely chopped red onioni
  • 2 tbsp finely chopped jalapeño peppers, stemmed & seeded
  • juice of 1 large lime
  • salt to tast
  • some grain-free tortilla chips for serving

In a medium bowl, combine blueberries, strawberries, jicama, cilantro, red onion, jalapeño and lime juice. Stir until well combined. Season with salt and serve with tortilla chips at room temperature or chilled.
