Blackberry Chia Seed Pudding


This delicious portable breakfast can also double as a dessert or snack. It has the perfect combination of fresh blackberries and creamy coconut milk.

Cook time: 20 min
Cool time: at least 1 hour
Total time: at least 1 hour 25 min
  • 1 pound fresh berries
  • ½ cup honey
  • 2 tbsp lemon juice
  1. Wash and clean berries.
  2. In a large pot, over medium heat, add the berries. Stir in the honey and lemon juice.
  3. Mash down the berries to release the juices.
  4. Bring the jam to a boil and immediately reduce heat to medium. Cook on medium-low heat until jam thickens (about 20 mins).
  5. Refrigerate for at least 1 hour.
  6. Once cooled, layer into apothecary jars with chia pudding base.

Total time: at least 1 hour 5 min
Serves: 4 servings


  • 2 cups coconut milk
  • ½ cup chia seeds
  • ½ tsp vanilla extract
  • 1½ tbsp honey
  1. Combine all ingredients in a bowl.
  2. Mix well, until combined, until mixture begins to thicken.
  3. Cover and store in refrigerator overnight (for at least an hour).
